1 Joint of Beef, Vegetable Oil, 2 Onions, 2-3 Large Potatoes, Ginger (raw, small cube), or 1 teaspoon of ginger powder, 3 cloves garlic, Salt, 1 cup frozen garden peas,
3-4 small bits cinnamon, 4/5 whole black pepper corns, 3 whole cardamoms, 1 heaped teaspoon crushed extra hot chilly peppers, 1 heaped teaspoon turmeric,
1 level table spoon castor sugar, 1 level tablespoon garam masala, 1 heaped tablespoon madras curry powder (hot), 1 teaspoon chilly powder, 1-2 cups water, basmati rice.
OK here we go, for best result follow this recipe to the tee.
Firstly gather all your ingredients together.
 
Pour enough vegetable oil on the pan to cover the base comfortably.  
Dice your 2 onions to small cubes, then dice your garlic and ginger into small bits. The smaller the better. 
Fry your onions, garlic and ginger in the oil over a medium to hot temperature.  
Prepare 1 heaped teaspoon of crushed extra hot chilly peppers. 5 whole black pepper corns, and 3 cardamoms. Once done add them to the onions. 
Sort 3-4 bits of cinnamon add them also to the onions.  
If you have a blender, blend approx 6-7 medium size tomatoes, if you don't have a blender cut the tomatoes into small cubes. 
Then add all your spices to the pan. 1 heaped teaspoon of turmeric, 1 level tablespoon of garam masala, 1 heaped tablespoon of madras curry power (hot). 1 teaspoon chilly powder. After that pour in your tomato mixture.  
Stir thoroughly, then add a generous pinch of salt and stir. Temperature should still be quiet hot. 
Cube your beef into small chunks, not to small. Then add this to the pot.  
Add 1 tablespoon of castor sugar to the main dish. Now you need to simmer for approximately 1 to 1/2 hours, until the beef becomes soft. If the mixture runs dry add half a cup of water. Stir every 10-15 mins to make sure the bottom doesn't burn. 
Prepare your rice for cooking, preferred is Basmati.  
Once the beef begins to become soft, peel two large potatoes and cut into small pieces, the size is your personal choice. 
Mix together for about 20 min's until the potatoes begin to become soft.  
Now add at least one whole cup of frozen garden peas. Continue to simmer on low heat, until the meat is soft and the potatoes are cooked through.  
Serve on a bed of basmati rice and enjoy.
If the Curry is to hot you can add some Mango Chutney to the plate, the will cool it down. You can also serve with Naan bread. Enjoy.
