25 grams butter, 1 large
onion, 1 large potato, 2 medium broccolis,
150 millilitres single cream, 3 vegetable stock cubes,
water, salt and pepper.

Gather all
your ingredients together |

Melt the
butter in a large saucepan with a large base |

cut your
onion and potato into fine cubes, you don't need to dice as it will
be blended later. Next sweat the onions and potato in the saucepan
at medium heat, make sure onions nice and translucent |

In this
recipe use the stem of the broccoli, first cut off the stem, then
peel the rough edges off. Cut into small pieces then add to the
onions and potatoes, by know the onions should be translucent |

prepare 800
millilitres of vegetable stock, once this is done add it to the pan
with the onions, potatoes and broccoli stock. Then add salt and
pepper to taste leave this on medium heat to simmer |

Measure out
just over 150 millilitres of single cream and put aside |

Dice the
rest of your broccoli into small pieces, again you don't need to
dice as you will be blending this later when soft |

add to the
stock and simmer gently until the broccoli becomes soft |
 |
the add the
single cream to the pan and stir gently, reduce the heat to low |
 |
stir gently
until the cream becomes warm, don't bring to the boil, 2 - 3 minutes
should do, Once this is done ladle into a blender or food processor.
Don't over blend just enough to make a nice thick soup |

Here you
go, it's done. Nice and simple, you can garnish the top with herbs
if you wish and serve with bread. Enjoy |
