Recipe: 2 Packets lean mincemeat, 2 medium to large carrots, 6 large
potatoes,
1 large onion, garden peas (1 Cup), 3 Oxo cubes,
Salt and Pepper, Water,
Tomato Puree, Worcester sauce, Soy sauce, Brown sauce,
butter & milk (for potatoes)

Get all
your ingredients together as above |

For the
stock you will need 2 Oxo cubes, tomato puree and boiling water |

Firstly
peel your potatoes and put on the boil, these will be mashed later
so must be nice and soft when done |

Put your
mince in a large frying pan or wok as illustrated here, put on a
medium temperature and brown thoroughly |

Chop up
your onions and carrots into small pieces, this can be adjusted for
your preference, this illustration doesn't include the onions. Get
about 1 cup full of garden peas, (preferably frozen) |

With the
carrots and peas put them in a small saucepan and gently boil until
tender but not to soft |

Put 2 Oxo
cubes into a jug, add a teaspoon of tomato puree and add 1/2 a pint
of boiling water |

Put your
stock in the browned mincemeat, make sure the mincemeat has no signs
of red in it |

Add a
teaspoon of soy sauce, a teaspoon of worcestershire sauce and a
tablespoon of brown sauce to the mince. In fact you may in time
adjust the amounts of each you put in according to taste |

add the
chopped onions (uncooked) carrots and peas to the mince |
 |
Add salt to
taste and leave simmer on a gentle heat for 10 minutes or so, I also
sprinkle another Oxo cube on the top of this to add to the beefy
flavour. This is up to you, in time you may adjust accordingly |

Remove the
potatoes from boiling by this time they should be nice and soft, to
check skier with a knife and make sure soft all the way through,
drain all the excess water and add some milk and butter |

Mash
thoroughly to a smooth consistency, make sure their not to watery
though, you can always add more milk and butter but you can't take
away so use your judgement |

Drain the
excess water off the Mincemeat and place in your preferred cooking
dish, I use this rectangular oven ready dish, the choice is yours.
Press down so nice and flat, making sure theirs enough room left on
top to put the potato on |

Spread the
potato over the top and smooth over with a spoon. Don't worry if the
potatoes stick to the spoon and some carrots or mince come to the
top. Once this is done score the top with a fork as illustrated,
this will give a nice pattern and make sure the potato cooks through
on top |

Put in a
pre heated oven 160 degrees for 20 to 30 mins until you have a nice
crisp brown finish as illustrated. You can serve this with
vegetables or on it's own. |
